What I Ate - Weekday Edition

For those curious, I documented everything I ate in one day to show a glimpse of what my "normal" intake looks like; honestly, every day is pretty different depending on work schedule, cravings, if I workout or not, what food's available, etc. However, I do typically have breakfast, lunch, dinner, 1-2 snacks and dessert like 4-5x/wk.
Breakfast:

-- 1 slice of Dave's Killer Bread + Maranatha Crunchy Peanut Butter + fresh raspberries --
9:30 am: Slept in a little later than I had intended, so breakfast was a quick bite before heading out the door.
Pre-workout:

-- 1 small Granny smith apple --
12 pm: About 30-45 minutes before my run I ate a small apple; it's a simple source of carbs/energy and quick to digest, so I knew it wouldn't sit in the stomach for too long and cause discomfort while exercising.
Post-workout/Lunch:

-- Smoothie: 1/2 frozen banana + handful of spinach + 4 Trader Joe's frozen coconut chunks + 1/2 scoop GOL Vegan vanilla protein powder + ~1/2 cup unsweetened vanilla almond milk --
1:45 pm: Ran about 4 miles outside (it was beautiful!), showered and whipped up this simple green smoothie while I prepped lunch.

-- 1 can Trader Joe's tuna in water, drained + 2 tsp Chosen Foods avocado oil mayo on spinach salad with chopped bell peppers + hemp hearts + leftover deviled egg + drizzle of tahini & fresh lemon juice --
Dinner:

-- 1-1/2 bowls of Eat Smart Sweet Kale Salad Kit + crockpot shredded chicken + mango avocado salsa --
7 pm: I threw a large frozen chicken breast in the crockpot around 4 pm to cook on high for 3 hours. The hubs and I went for a nice long walk after work, and got home just in time to prep the salad and toss the cooked chicken in. I normally don't eat two salads in a day, but this was honestly just quick and easy!
Dessert:

-- 8-10 (?) spoonfuls of Tillamook Cookies & Cream ice cream --
8 pm: I've been craving ice cream the past couple of weeks, maybe because it's getting warm out finally!? I'm basically obsessed with Tillamook ice cream; it's so creamy and satisfying with primarily simple ingredients (real cream, milk, sugar and egg yolks). And yes, I often eat right out of the container because I don't want to dirty another bowl! I try not to eat at least 2 hours before going to sleep to prevent heart burn/optimize digestion, but since we ate dinner later than usual - I'm a pretty firm 6 pm dinner kinda gal - it just worked out this way today. No stress, no shame; I'll just try to eat a little earlier tomorrow!
