Instant Pot Vegetable Beef Soup

Comfy, cozy soup made EASY in the Instant Pot. If you prefer to make it like a thicker stew, you can mix together 2 tablespoons cornstarch + 2 tablespoons cold water and then stir it into the soup after cooking until it thickens up.

RECIPE
Makes 4-6 servings. | Prep time: 5-10 mins | Cook time: 30-40 mins
Ingredients:
1-1/2 pounds beef stew meat
1 tablespoon avocado oil or olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon Italian seasoning
2 cups beef bone broth (I used Bonafide Provisions)
1 (10-ounce) can tomato sauce
2 tablespoons Worcestershire sauce
1 pound baby potatoes, cubed (I used baby purple potatoes)
2-3 large carrots, sliced
1 large onion, chopped
3 cloves garlic, minced or 1-1/2 teaspoons minced garlic
Instructions:
1. Add oil to the Instant Pot and turn on the 'Saute' function. When the oil starts to sizzle, add the stew meat and season with salt, pepper, and Italian seasoning. Cook the meat until browned on all sides.
2. Add the beef bone broth, tomato sauce, Worcestershire sauce, potatoes, carrots, onion and garlic to the Instant Pot and stir to combine.
3. Close the lid and the steam valve on the Instant Pot. Cook on high pressure for 30 minutes, then allow the pressure to release naturally for 10 minutes before doing a quick release.
