Quick Sautéed Collard Greens with Garlic and Ham

Collard greens have a nice, chewy texture and I love how they've turned out in this quick sautéed version. The garlic and black forest ham add an aromatic, savory flavor that tastes like the Southern version but doesn't take more than fifteen minutes to put together and is a bit lighter. I paired this side dish with another Southern classic, meatloaf.
RECIPE
Makes 2-3 servings. | Prep time: 5 mins | Cook time: 10 mins

Ingredients
1 bunch collard greens (about 5-6 leaves)
2 tablespoons avocado or olive oil
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
Salt and black pepper, to taste
2 tablespoons water or chicken broth
2-3 slices deli black forest ham, cut into bite-size pieces
Instructions
1. Wash and dry the collard greens. Remove the large stems that run down the center. Stack 5 to 6 leaves on top of one another, roll them up and slice into 1/2 inch-thick strips.
2. Heat a large sauté pan over medium-high heat and add the oil. Once hot, add the garlic and red pepper flakes and sauté until fragrant, or about 2 minutes.
3. Add the collard greens, and sauté until bright green, about 3-4 minutes. Season with salt and pepper. Add black forest ham pieces and stir in the water or chicken broth and continue to cook until the liquid evaporates, another 2-3 minutes.
