Apple Cinnamon Mini Muffins {Protein-packed, Whole Grain}

I had quite a few green apples left over from my TJ's run a couple weeks ago and didn't want them to go to waste, so I whipped up these protein-packed, whole grain mini muffins using apple + cinnamon -- a flavor match made in heaven!

I love meal prepping mini muffins to enjoy throughout the week; I recommend eating a few as an afternoon snack or post-workout; for a light breakfast on the go (pair with a packet of nut butter!); or, as another topping on a yogurt bowl (= plain Siggi's or Icelandic skyr + banana slices + chopped walnuts/pecans + hemp/chia seeds).

I don't have a whole lot of time or the best set-up for awesome recipe videos (yet!), but I am a visual person, so I understand it can be more helpful to show recipes this way :)
RECIPE
Makes 24 mini muffins. | Prep time: 5-10 mins | Cook time: 12-14 mins
Ingredients
1 cup Kodiak Cakes Power Cakes Buttermilk Waffles/Pancakes Mix
1/4 cup ground flaxseed
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup apple, finely chopped (I used 2 small granny smiths)
1/4 cup pure maple syrup
1 egg
1/2 cup applesauce, unsweetened
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 375 degrees F and spray mini muffin tin with extra-virgin olive oil or coconut oil, or grease with butter.
2. In mixing bowl, whisk together Kodiak cakes mix, flaxseed, cinnamon, baking powder, baking soda, and salt. Then add in finely chopped apples (I used a chopper for ease) and stir to combine.
3. In separate mixing bowl, whisk together maple syrup, egg, applesauce, and vanilla extract. Then add wet ingredients to dry ingredients and stir to combine.
4. Divide batter evenly into 24 mini muffin wells. Bake at 375 degrees F for 5 minutes, and then at 350 degrees F for 7-9 minutes, or until inserted toothpick comes out clean.
5. Let cool in pan for about 10 minutes and then remove to place on cooling rack.
Note: Store in airtight container in the fridge for up to 1 week.
