Best Ever Banana + Dark Chocolate Chip Muffins

Recipe

Makes 12 muffins. Serving size: 1 muffin. Prep time: 5 mins | Cook time: 20 mins

INGREDIENTS:

  • 1/3 cup coconut oil, melted

  • 1/3 cup pure maple syrup

  • 2 eggs

  • 1 cup (or 2 medium) very ripe mashed bananas

  • 1/4 cup milk or water

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 1-3/4 cups white whole wheat flour (I like King Arthur's brand)

  • 1/2 cup dark chocolate chips

INSTRUCTIONS:

  1. Preheat oven to 375 degrees F. Spray muffin pan with nonstick spray.

  2. Whisk together coconut oil and maple syrup in a large mixing bowl until thickened. Then whisk in eggs, mashed bananas, milk/water, baking soda, vanilla, salt and cinnamon. Using a spoon or spatula, slowly mix in the flour until coated, but don't overmix (lumps are okay). Fold in dark chocolate chips.

  3. Spoon batter into muffin wells and fill about 3/4.

  4. Bake at 375 degrees for 5 minutes, and then lower to 325 degrees for 18 minutes. (Note: the elevated temperature initially helps the muffins form a higher top.)
