Vegan Coconut Cream Pie Protein Smoothie

Just a handful of real, simple ingredients blended into a creamy, dreamy nutrient-dense smoothie - great for a quick breakfast, afternoon snack, post-workout or even dessert!


RECIPE

Makes 1 smoothie | Prep time: 5-10 mins

Ingredients

  • 1 frozen medium banana

  • 5-6 frozen coconut chunks (I used Trader Joe's frozen Just Coconut Chunks)

  • 1 scoop Garden of Life Vanilla Plant-based Protein Powder

  • 1-2 tablespoons chia seeds (ble

  • 1 tablespoon cashew butter (peanut, almond or sunflower butter would work as well, but cashew butter has a less overpowering nutty taste, so it seems to pair well with the coconut here IMO)

  • 6-8 ounces water*

  • Hemp hearts and unsweetened coconut flakes for topping (optional)

Instructions

1. Add all ingredients, except the toppings, to a small blender (I have a Magic Bullet). Blend until thick and (relatively) smooth; there will be some chewy coconut shreds. Top with hemp hearts and unsweetened coconut flakes for a little extra texture. Enjoy!


*For a creamier taste, use coconut milk or another milk alternative instead of water.
