Cranberry-Clementine Scones

I've been drinking quite a bit more coffee in the afternoon lately. Decaf coffee, that is. I think the cold weather and my craving for warm drinks is partly to blame, but it could also be that I've been rewatching Gilmore Girls on Netflix and their constant coffee drinking makes me want me join in. Interesting how much media can influence our food/drink choices... for better or for worse.


Anyways, what goes better with afternoon coffee than a scone?! I had a big bag of clementines in the fridge and some dried cranberries in my pantry, so I decided to do a take on one of my fave scone flavors: cranberry-orange.



RECIPE

Makes 6-7 scones. | Prep time: 8 mins | Cook time: 16-18 mins

Ingredients

1 cup white whole wheat flour (I use King Arthur's brand)

1/4 cup white sugar

2 teaspoon baking powder

1/8 tsp salt

1/4 cup coconut oil

1/4 teaspoon vanilla extract

2 clementines, juiced

1/4 cup dried cranberries

Instructions

1. Preheat oven to 400 degrees F. Prepare a baking sheet with nonstick spray and set aside.

2. In a medium mixing bowl, whisk together flour, sugar, baking powder and salt until combined.

3. Add coconut oil, vanilla extract and clementine juice to the mixing bowl and, using a fork, gently incorporate ingredients without overmixing. Once dough forms, roll into balls and place on baking sheet.

4. Bake for 16-18 minutes or until golden brown. Enjoy!
