One-Bowl Apple Spice Baked Oatmeal

The perfect fall or winter make-ahead breakfast! I love overnight oats in the spring and summer, and warm baked oatmeal when it starts to get cold outside. Apples are in peak season in the fall, so it only felt right to make an apple spice version this time around.
I love eating the baked oatmeal warm out of the oven, but if you make a big enough batch and it's just you eating it, you'll likely have leftovers. The good news is, this tastes just as delicious reheated throughout the week, so consider breakfast taken care of!

RECIPE
Makes 9 or 12 servings | Prep time: 10 mins | Cook time: 20 mins
INGREDIENTS:
1-1/2 cups rolled oats (use gluten-free if needed for dietary reasons)
1 small apple, diced
1/4 cup coconut sugar (or brown sugar), packed
3 tablespoons ghee or butter, melted
1 egg
1 cup milk
1 teaspoon baking powder
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
Optional toppings: 1/4 cup toasted chopped pecans or walnuts, apple slices, greek yogurt
INSTRUCTIONS:
Preheat oven to 375 degrees F. Grease an 8x8 pan with nonstick spray (I like Trader Joe's coconut oil spray) and set aside.
In a large bowl, mix all ingredients until combined. Pour into prepared baking pan and smooth it to make even.
Bake for about 20 minutes. (Tip: if adding chopped pecans or walnuts, add them to the top of the oatmeal at the 15-minute mark and allow to toast for the remaining 5 minutes.)
Serve warm with optional toppings or store in airtight container in the fridge for up to 5-6 days.
