No-Bake Peanut Butter + Cacoa Nib Protein Bites

If you love Reese's, buckeyes, or any other peanut butter + chocolate flavor combo, you will LOVE these! Throw them together in a bowl, mix, roll into balls, and you've got super tasty snacks for the week... if they last that long! These are a huge hit for adults and kids alike. Plus, with the protein powder, peanut butter, and whole-grain rolled oats, these are a nicely balanced snack option (or breakfast on the go!) that provides fiber + complex carbs + protein + healthy fats for long-lasting energy.

RECIPE Makes 10 servings (~2 tablespoon sized bites) | Prep time: 5 mins | Chill time: 30 mins


Ingredients:

  • 2/3 cup creamy peanut butter

  • 1/4 cup honey

  • 1 teaspoon vanilla extract

  • 1 cup instant rolled oats (use gluten-free if needed)

  • 1/3 cup unsweetened shredded coconut flakes

  • 1/2 cup protein powder (I used 100% whey)

  • 2 tablespoons ground flaxseed

  • 1/3 cup cacao nibs (or dark chocolate chips)

  • 1/2 teaspoon cinnamon

Instructions:

  1. Mix peanut butter, honey and vanilla in a medium bowl. Then add additional ingredients until thoroughly mixed. Cover and let chill in the fridge for about 30 minutes.

  2. Once chilled, use a spoon to make individual bites (about 2 tablespoon-sized) and roll into balls. Store in an airtight container and keep refrigerated for up to 1 week. If it's too dry or crumbly to roll into balls, add peanut butter or honey to help bind.
